Hola! Después de muchas hornadas de mil recetas combinadas por fin he conseguido hacer una hornada completa perfecta de macarons, hoy os pondré la receta de chocolate y os daré mi truco, ya que vivo en una zona costera y aquí la humedad hay días que llega al 90% y eso para hacer macarons perfectos, nos complica y mucho la técnica del secado.

Antes me gustaría hablaros un poco de la historia del macarons, es origen italiano, y se dio a conocer en el siglo XVI, surgiendo del horno del pastelero de la corte francesa como cúpulas redondas con base plana, y en el siglo XIX se empezaron a unir de dos en dos con un relleno entre medio.

También se comenta que fue creado en 791 en un convento cerca de Cormery, otros dicen que Catalina de Médicis lo llevó desde Italia. La primera receta de macaron figura en una obra que se remonta a principios del siglo XVII. Se cual sea su origen gracias al repostero por crearlos.

Estas galletas merengadas llegaron a Francia en 1581, cuando la reina Catalina de Médici las ofreció para la boda del duque de Joyeuse en París, y años más tarde María Antonieta las serviría en sus banquetes en el palacio de Versalles.

En San Juan de Luz, País Vasco francés, el pastelero Adam preparó y regaló macarrones a Luis XIV para su boda en 1660, y desde entonces, sus descendientes perpetúan la tradición.

Vamos con la receta:

Ingredientes:

30 gr de azúcar

110 gr de azúcar glass

60 gr de almendra picada

50 gr de clara de huevo

15 gr de cacao en polvo

Modo de empleo:

Tamizar las almendras molidas con el azúcar glass, no puede quedar ningún grumo, yo lo pongo todo en la batidora y lo pico todo junto y después lo tamizo. Montar las claras a puto de nieve bien fuerte, en mitad del proceso le añadimos el azúcar y seguimos montando, el truco están bien montadas cuando le damos la vuelta a bol y el merengue no se mueve, ahora viene el proceso más delicado mezclar con mucho cuidado y con movimientos envolventes la mezcla de cacao con las almendras y el azúcar glass. Yo tengo unas plantillas de silicona para hacer los macarons o podéis imprimir la que os dejo yo en este post y después utilizarla sobre papel para hornear y así les daréis con la manga pastelera la forma perfecta a los macarons. Ahora es el turno del secado, un proceso muy delicado con el horno frío metemos las bandeja en la posición del medio del horno y dejamos secar durante 20 minutos a 50 grados, trascurrido ese tiempo subimos el horno a 150 grados durante 15 minutos más, y ya tenemos listos nuestros macarons!!

Recordar dejar enfriar antes de desmoldar y rellenar.
