Hola chicas! La receta de esta semana son las albóndigas, ese plato típico que se hacen en diferentes países las podemos hacer de carne o pescado y con diferentes salsas, las clásicas las que nos hacen nuestras madres hasta innovar nuevas recetas y con salsas diferentes. Yo en esta ocasión me he decantado por unas albóndigas rebozadas y fritas junto a una salsa verde, yo no la he pasado por la batidora he dejado todos los ingredientes enteros, en casa nos encantan así, pero si queréis hacer la salsa más fina le pasáis la batidora y trituráis todo. Vamos a por la receta.

INGREDIENTES

Para 4 personas:

  • 250 g de magro de cerdo picado.

  • 250 g de carne de ternera picada.

  • 2 huevos.

  • Perejil picado.

  • Pimienta, sal.

Rebozado:

  • 250 g de harina sin gluten.

  • 2 huevos.

  • aceite para freir.

  • especies y sal.

Salsa:

  • 1 Cebolla grande.

  • 1 pimiento verde grande.

  • 50 gr de guisantes.

  • 50 ml de vino blanco.

  • 500 ml de caldo de pollo sin gluten.

  • 1 cucharada sopera de maicena.

  • sal, pimienta y especies.

PREPARACIÓN:

  • Mezclamos la carne, los huevos, el perejil picado junto con la sal y la pimienta, amasamos bien con las manos y formamos bolas según el tamaño que queramos darle a nuestras albóndigas, ponemos aceite en una sárten a calentar, y mientras vamos pasando nuestras albóndigas primero por harina y después por huevo, y las freímos, yo las pongo sobre papel de cocina para quitarle el exceso de grasa.

  • Ponemos en una olla un poco de aceite y lo ponemos a calentar a fuego suave, mientras picamos la cebolla muy finita y el pimiento verde, cuando el aceite este caliente añadimos la cebolla picada y salteamos cuando este blanda añadimos el pimiento y rehogamos bien, después añadimos los guisantes y el vino blanco, dejamos 5 minutos para que se evapore el alcohol bien.

  • Mientras en una taza separamos un poco del caldo de pollo y disolvemos la maicena bien para que no queden grumos, añadimos el caldo de pollo a la mezcla anterior y la taza de maicena, sal-pimentamos e introducimos las albóndigas y dejamos que se haga bien la salsa. En casa nos gusta ver los tropezones, pero si queréis que la salsa se quede más fina solo tenéis que pasarla por la batidora con cuidado de no picar las albóndigas.
